The oysters are cultivated on elevated structures called oyster racks or oyster tables, made of iron and located approximately half a meter above the ground. On these tables are carefully placed the sacks or poches where the oysters grow from seeding to harvesting. The tables are arranged in rows, and each one supports five sacks firmly fastened with rubber bands and hooks to prevent the tides or the wind from throwing them to the muddy ground, where the oysters could not survive.
The particularity of this culture lies in its intertidal location: twice a day, these grids are completely covered by water and, at other times, they are completely exposed to the air. This means that the oysters must constantly adapt to the rhythm of the tides, thus developing a strong muscle that keeps them closed during the hours when they remain without water.
